RP18-Miso-marinated Portabello &Pistachio

Asian Fusion Mushroom Soup

Paired with 2010 Pinot Noir


8 cups chicken broth

1-1/2 Tbsp Thai fish sauce

2 Tbsp tamari

4 oz. thinly sliced white mushrooms

4 oz. thinly sliced crimini mushrooms

1/2 cup frozen peas

4 large eggs, beaten

Salt & pepper to taste

1/4 cup chopped scallions


Bring chicken broth to a boil. Reduce heat to a simmer. Add fish sauce, tamari, mushrooms & scallions. Simmer for 5 minutes. Add peas & eggs, stirring constantly to break up eggs. Simmer for 2 minutes longer. Remove from heat. Season to taste with salt & pepper. Yield: 6 servings.
